“Parrilla” is the catch-all name for the type of BBQ traditionally found throughout Argentina, Chile, Uruguay and beyond; also variously known as a gaucho grill or santa-maria grill. These styles of BBQ were originally used by the Argentinean gaucho or cowboys – to cook beef as they roamed el campo, or the countryside (though many histories also document the indigenous Americans as the first true South American barbecuers).
Meat – particularly beef - is a way of life in much of South America; a tradition that is as much about swapping stories and singing la musica folclórica around a smouldering stack of coals and firewood as it is about food and flavour.
